<p><strong>Meze</strong><br />
The local fare is best described as having Greek, Turkish, and Middle Eastern influence and flavor. But the unique element of Cyprus food is it is always fresh. The finest introduction into Cyprus cuisine is Meze, which is a sampling of several different dishes that include Hummus, Tashi (garlic dip), Stifado (tender beef stew), Artichoke salad, olives, and numerous other traditional dishes. Meze is the perfect way to sample traditional Cyprus food.</p>
<p><strong>Main Dishes</strong><br />
<strong>Afelia</strong><br />
Some of the most enticing main dishes include Afelia, which is slowly cooked pork marinated and cooked in red wine and crushed coriander seed. Afelia is served with Bulgar, a type of wheat cereal, and yogurt.</p>
<p><strong>Kleftiko</strong><br />
Kleftiko (which mean “stolen meat” in Greek) is lamb wrapped in parchment paper, slowly roasted and flavored with garlic, oregano or rosemary, and lemon juice. The lamb is roasted in a clay oven that is sealed so the meat turns out tender and juicy.</p>
<p><strong>Koupepia</strong><br />
Koupepia are grape or vine leaves stuffed with a variety of vegetables. Koupepia may also be meat filled. Meat filled Koupepia are usually served hot and vegetable filled Koupepia are served cold with yogurt. The combination of vegetables in Koupepia may include chopped onion, tomato, peppers, and eggplant. Meat filling for Koupepia may include minced lamb or beef and often seafood like mackerel, squid, and mussels.</p>
<p><strong>Lountza</strong><br />
Lountza is a very traditional dish made of marinated pork tenderloin. The pork loin is soaked in brine and marinated in red wine, salt, coriander, black pepper, and cumin for about 14 days. Next, the pork tenderloin is dried and smoked. Lountza is served sliced with Zivania, which is a unique distilled alcohol drink that is made from the pomace of grapes (meat of the grapes after pressing) that is clear with a distinctive scent of raisins. Lountza may be served in salads but makes very popular sandwiches.</p>
<p><strong>Drinks</strong><br />
Cyprus is famous for having over 100 different varieties of grapes growing in vineyards located in the foothills of Mount Olympus. Wine production in Cyprus dates back to 2000 BC. The most famous locally produced wine is Commamdaria that dates back over a thousand years. The most popular locally produced beer in Cyprus is called KEO, which is a light colored lager with a pilsner taste. Cypriot distilled spirits are Zivana, a clear alcohol with a hint of raisins, and Five Kings brandy produced from Cyprus grapes and aged in oak for no less than 15 years.</p>

These days you can visit the museum which is near the Terra Santa Convent and actually participate in an authentic dig. </p>

<h2>Larnaca: Rich in History</h2>

<p>If you are planning on visiting Cyprus you must spend some time in <strong>Larnaca</strong>. The rich history of the city can be discovered in architectural remains such as the ruins of Ancient Kitium and the Cyclopean Walls. The Larnaca Salt Lake is near the international airport and fills with water during the winter months. This is one of the most beautiful times to visit as flocks of flamingoes call the lake home from early November until late March. Another great place to visit is the Avia Phaneromeni which is an underground chapel that has two chambers. The rock cavern is thought to be a pagan tomb. The chapel is known to have mystical powers and is a popular destination for people who suffer from chronic illnesses. The Fort of Larnaca is a very popular tourist destination. It was built by the Turks and is a fascinating museum. During the summer the open air garden in the courtyard is used as a theatre. Another must see is Ayios Lazaros, or the St. Lazarus Church. Erected in the 9th century A.D., it is believed to have been built on the empty grave of St. Lazarus. Every year eight days before before Easter St. Lazarus’ icon is celebrated in a parade through the streets. </p>

<h3>Larnaca Festivals</h3>

<p>Larnaca is known for their major festivals which are held all year round. One of the most important is Kataklysmos which literally means the Festival of the Flood. Originally lasting a week, it has stretched to nearly three with market stalls, rides, restaurants and entertainment. </p>
<p>Cyprus is known for its beautiful beaches and <em>Larnaca</em> is no exception. One of the most famous is Phinikoudes. It is named after the small palm trees that were planted there in 1922. There are beachside cafes, hotels, bars, restaurants and open air markets that are loved by the locals and tourists alike. </p>
<p>Larnaca has some incredible restaurants and if you are craving seafood you will not be disappointed. You can sip a glass of wine and gaze out at the sea while you dine on succulent lobster. Other offerings include Italian, Chinese, Japanese, French and Indian. Some popular international chains have also opened up in this culturally diverse city. </p>
<p>The climate in <u>Larnaca</u> is Mediterranean, and you can expect lengthy warm summers and short winters which are extremely mild. You can expect rainfall in December, January and February which can sometimes be unpredictable. </p>
<p>With so many package deals available you should start planning a trip to Larnaca, but remember to plan accordingly. There is so much to see and do in Cyprus you may want to stay an extra week or two.</p>

Original architecture and family-run restaurants make it welcoming and popular for both locals and visitors. Located just 30 minutes-drive from the busier holiday resorts of Paphos and Limassol, visitors to Pissouri enjoy pure relaxation and over 300 days of sunshine. About half of the village’s 1100 residents are Cypriots, and the rest are foreigners, mainly British nationals. </p>
<p>Historical reports say that Pissouri’s name is derived from the pitch-dark nights in this tiny village. One report states that German saints came to the island from Palestine in order to practice and arrived on a pitch-dark night. Others think that the name stems from the skin-sap production from pine trees (“pissa”) that began in the region during the Byzantine era. </p>
<p>Vineyards and forested land abound in Pissouri. Throughout history, the main industry for locals has been the vineyards and farming. Although the area is famous for growing grapes, citrus, almond, carob, and olive trees also grow in the valley. Many locals are now involved in the tourism industry, but the village still retains its original character. </p>
<p>Pissouri is divided into 2 areas – Pissouri beach and Pissouri village. The beach resort area has a few restaurants, tavernas, one hotel, two banks, and a few shops. People enjoy the golden sand and pebbled beaches, and exquisite views in the winter as well as in the summer. Visitors in the summer can partake in a variety of water sports and excellent golfing. </p>
<p>From Pissouri village, you can enjoy beautiful views of the sea at Cape Aspro, the countryside to the East, and the Troodos mountain range, including Mount Olympus, to the north. The village also has a number of shops, tavernas, and restaurants. An 800-seat amphitheater was built in 2000, and provides entertainment year-round. During the summer the amphitheater hosts “Cyprus night” with dancing and music. </p>
<p>The Church of the Apostle Andrea is the town’s main church. Built entirely with the volunteer labor of the villagers themselves, construction of this Gothic-style church took 12 years and was completed in 1883. All the stone comes from local villages, and the church is famous for its carved wooden Icon Stand.</p>

<p>July is when the three day Beer Festival is held. Dancing, music and a variety of Cypriot and imported beers are the highlights of this festival</p>
<p><strong>Shakespeare Festival</strong></p>
<p>This festival is held at the Kourion Amphitheater, a fitting venue to honor the works of Shakespeare. This charity event takes place annually in June</p>
<p><strong>Amathusia Festival</strong> </p>
<p>Held in July, this event features performances by local dance groups, string quartets and traditional and modern Cypriot singing groups</p>
<p><strong>Wine Festival</strong></p>

<p>If you’re a beginner, the first place to dive is at <strong>Green Bay, Protaras</strong>. This is an easy and safe dive site that almost always offers perfect weather and crystal clear water. If you have children who are interested in scuba diving, this is a great way to get them started. It’s also an excellent option for anyone who hasn’t dived in a while and needs something simple to get them back into the groove. Those who choose to dive will find unique fish and underwater sculptures. </p>
<p><strong>Green Bay 2</strong> is slightly more challenging. This is a great dive site for people who want to explore underwater caves. One of these caves has earned the name “Blue Hole” because of the way the light shines through it when the sun is out. It’s a gorgeous site. If you want to feel like you’re truly living, it’s highly recommended. The rest of Green Bay 2 is also gorgeous. Many people like to swim over the rock structures. </p>
<p><strong>The Cliffs</strong> is best for those who want to go deep diving. There are many neat features about this dive site. One is the different types of deep crevices in the rock face, which lead to viewing opportunities of many different types of marine life. Another neat feature is the natural safety stop on a sandy ramp. </p>
<p><strong>Sea Caves</strong> is just like it sounds. This site is different from Green Bay 2, though, because the caves are at shallow depths. This allows for more exploration time. When you’re through, you can also eat lunch at a table next to the lunch truck.</p>

From ancient times, Cyprus had an Old Paphos and a New Paphos. The current city is situated where New Paphos stood, and the city has the second largest of the island&#8217;s airports.</p>
<h2>Old Paphos</h2>
<p>Now, Old Paphos is famous as the site where Aphrodite, the Greek goddess of beauty and love, was born and so the worship of Aphrodite dominated the culture. In the 1st century A.D., Paul, the early Christian apostle, traveled to Paphos and it is known that it was while in this city that his name changed from Saul to Paul. The town is a UNESCO World Heritage Site today.</p>
<p>The region of Paphos has been inhabited since the Neolithic period. The elaborate ruins from the Greeks, Romans, the Classical and the Hellenistic periods include Neo Paphos&#8217; lovely mosaics. Today, some of the famous landmarks of the area are the Tombs of the Kings, catacombs used by Christians, Paphos Castle and the Rock of Aphrodite.</p>
<h3>Paphos Seaside Resort</h3>
<p>Currently, Paphos is a popular seaside resort destination providing luxurious accommodation and much to see. The medieval port area has many fabulous hotels and cafes, and the port also is a major entertainment center. The main thoroughfare of the city that connects the two quarters is called St. Paul&#8217;s Avenue.</p>
<p>This scenic region has subtropical-Mediterranean weather and the rains come between November and March. Summers are generally rain-free. <p>Cypriot beach Avia Napa landed the number one spot on the Top Ten European Beach Destinations list, beating Skiathos in Greece and Protaras (also in Cyprus) in third place.</p>
<p>Ayia Napa&#8217;s vibrant music scene and nightlife, boat tours and diving spots, combined with its clear turquoise waters and soft sandy beaches, won the European category. Oludeniz in Turkey came in at fifth place, with St. Ives in Cornwall (sixth), and Mallorca, Sicily and Sardinia completing the Top Ten.</p>
